We made this easy quinoa salad recipe this past weekend for a fun BBQ. It was surely a hit. Not to mention how colorful it turned out.
It was pertty as we say in Texas.
The amazing thing about this easy quinoa salad is that it doesn’t contain any oil. It’s completely healthy for you.
I actually kept a bowl for myself to eat the next day. I think it might have tasted even better on day 2. So feel free to make it ahead of time.
How to Make Easy Quinoa Salad with Cranberries and Walnuts
Easy Quinoa Salad with Cranberries and Walnuts
It's so colorful and makes a tasty side dish.
- 1 c quinoa
- 1/2 c butternut squash or carrots shredded or finely diced
- 1/4 c red bell pepper finely diced
- 1/4 c yellow bell pepper finely diced
- 1/2 c red onion finely diced
- 2 T curry powder
- 1 lime juiced
- 1/2 c fresh cilantro chopped
- 1/4 c walnut pieces
- 1/2 c cranberries
- salt and pepper to taste
Cook Quinoa according to directions
Let cool in refrigerator
Once quinoa is chilled add remaining ingredients and stir well
This easy quinoa salad makes a wonderful side dish with chicken or pork. Just simply throw some meat on the grill and you have yourself a healthy easy meal. Don’t forget to double the recipe so you can have leftovers.
