Easy Quinoa Salad with Cranberries and Walnuts

It's so colorful and makes a tasty side dish.

Servings 8

Ingredients

  • 1 c quinoa
  • 1/2 c butternut squash or carrots shredded or finely diced
  • 1/4 c red bell pepper finely diced
  • 1/4 c yellow bell pepper finely diced
  • 1/2 c red onion finely diced
  • 2 T curry powder
  • 1 lime juiced
  • 1/2 c fresh cilantro chopped
  • 1/4 c walnut pieces
  • 1/2 c cranberries
  • salt and pepper to taste

Instructions

  1. Cook Quinoa according to directions

  2. Let cool in refrigerator 

  3. Once quinoa is chilled add remaining ingredients and stir well
