Zesty Bean Salsa

This taste wonderful with tortilla chips.

Ingredients

  • 1/2 c olive oil
  • 1/4 c apple cider
  • 1/4 c Stevia
  • 1 green pepper finely diced
  • 1 orange pepper finely diced
  • 1 yellow pepper finely diced
  • 1/2 red onion finely diced
  • 16 oz blacked-eyed peas drained and rinsed
  • 15 1/2 oz Great Northern beans drained and rinsed
  • 15 oz shoepeg corn drained
  • 7 oz chopped jalapenos drained

Instructions

  1. Combine oil, vinegar, and stevia in a small saucepan over medium heat. Bring to a boil. Put aside.

  2. Mix and stir together all the remaining ingredients in a large bowl.

  3. Add oil mixture to large bowl. Mix well.

  4. Refrigerate for 2 hours. Serve with tortilla chips.
