Easy Taco Rice Casserole!

Taco Rice Casserole is a favorite around here!

It makes a lot and it’s very filling for those Tex-Mex lovers!

How To Make Taco Rice Casserole


  • 1 lb of ground beef
  • 1/2 c of onion, chopped
  • 1/4 c of green pepper
  • 1 pkg of taco casserole
  • 1 1/2 c of water
  • 8 oz of tomato sauce
  • 3 c of cooked rice
  • Velveeta Cheese
  • Bag of your favorite tortilla chips


Brown ground beef with onion and green pepper. Drain fat and add taco seasoning with water. Cook and bring to a boil and turn down heat. Add tomato sauce and rice and mix well in the pan. Transfer taco rice casserole into a baking dish. Top with slices of Velveeta. Bake on 350 degrees for 30 minutes or until bubbly. Place broken tortillas chips on top of casserole. 

Serves 6-8

We always double recipe to feed my gang. There usually is enough leftover for lunch the next day.
