I like to double the recipe, so I can freeze a second batch for a later date. I just throw it in my slow cooker to reheat on low for about 6 hours.
Hearty White Bean and Kale Soup Recipe
- 2 c of cooked chicken, diced
- 1 T of olive oil
- 6 garlic cloves, minced
- 1 medium onion, chopped
- 2 carrots, sliced
- 4 c of kale, raw
- 4 c of chicken broth, low-sodium
- 2 cans of white beans, undrained
- 1 can of diced tomatoes
- 3 T of Italian herb seasoning
- Salt and pepper to taste
In large pot, heat olive oil and saute onion, carrots and garlic. Add kale and saute. Add 3 c of broth, 2 c of beans, diced tomatoes, herbs, and salt and pepper. Add chicken and simmer 5 minutes. In a blender, mix remaining beans and broth until smooth. Stir into soup. Simmer for 20 minutes. Serve.
