My family adores this delicious granola muffins recipe. They make the perfect breakfast on Sunday mornings when we are all trying to get out the door for worship or on busy homeschool days.
They freeze wonderfully, too! So put your pretty apron on and make these easy muffins! Your family will thank you!
The Best Granola Muffins Recipe
- 2 c of granola
- 1 1/2 c of flour
- 2 t of baking powder
- 1/2 t of baking soda
- 1/2 t of sea salt
- 1 t of almond extract (you can substitute vanilla)
- 2 eggs
- 1/2 c of brown sugar
- 1 c of buttermilk (I just add a tablespoon of white vinegar to the milk)
- 1/4 of vegetable oil
Spray muffin pan with cooking spray. Mix all ingredients in a large mixing bowl except for 1/2 c of granola. Fill muffin pan 3/4 full. Sprinkle the remaining granola on top of muffin mixture. Bake at 350 degrees for 15 minutes or until done.
Makes 18-20 muffins.
