At least once a week I have a craving for south of the border or Tex-Mex flavor.

Here is the perfect side to curb the craving without instantly sending you into siesta oblivion!

 Yes, I do love Mexican food and there is plenty to try here in Texas.  Some of it is Tex-Mex with multicultural influence while other is more authentic with its roots truly in South America.  Either way, both cilantro and lime can be found in most of these dishes but in a limited amount.  We are not stingy with cilantro or lime in our Cilantro Lime Rice.  Refreshing too, it is ideal as a light side or perfect to accompany black beans or even an upcoming twist on taco meat that I will post next week.

This recipe is super easy, has only 5 ingredients and uses no fats so it will fit a vegetarian diet.

Cilantro Lime Rice

Ingredients:

  • 3C Instant white rice, uncooked
  • 3C water
  • Juice of 1 lime
  • Zest of ½ lime
  • 1 bunch cilantro chopped

Directions:

  1. Place water and lime juice into pot and bring to a boil.
  2. Add white rice to pot and cover for 5 minutes until water is absorbed.
  3. Combine lime zest and cilantro with cooked rice. Fluff with a fork and serve.

      

The next time you have that nagging craving for Mexican food, chop a bunch of cilantro, squeeze a lime and get ready for this refreshing treat!
