I had about 10 minutes to whip up dinner last night. I already grilled the chicken the night before, but needed a carb and veggie.
So I whipped up this so easy recipe, Pumpkin Rice. It tasted wonderful. It just had a hint of pumpkin, nothing to noticeable.
Recipe Pumpkin Rice
- 3 cups of Minute Rice
- 3 chicken bouillon
- 1 T Butter
- 1 c of pumpkin puree
- 1/4 c of onion, minced
- 1 T Pumpkin Pie Spice
Cook your rice according to the directions. I would have used brown long rice, but I was in a hurry. I put the chicken bouillon and onions in with the water while the rice is boiling along with the butter. When rice is almost ready, add the pumpkin and spices, bring to a boil. Simmer until the rice is cooked. Season with salt and pepper.
I froze the leftovers for another meal.
