Since guiding my eating towards the Trim Healthy Mama plan, I’ve been craving creamy dishes. This creamy lemon chicken hit the spot for me. I still at times miss my beloved pasta, but I am serious about getting my weight under control, so I can work on my self-love goal this year.
I am a full time teacher, blogger, and single mama that just doesn’t have the luxury of spending a lot of time in the kitchen.
However, I have discovered that making a hearty healthy meal has nothing to do with spending long hours in the kitchen. It’s about finding balance and those family favorite recipes that everyone looks forward to that makes a happy gang.
Last weekend, I whipped up this easy Lemon chicken breasts recipe for lunch for my gang. I served it with cauliflower rice, green beans and a big green salad. The creamy lemon sauce was divine. If your not concerned with carbs, I would serve this on top of angel hair pasta.
But in all honesty, nobody missed the pasta. I gave my children a piece of buttered bread, and all were satisfied.
How to Make Creamy Lemon Chicken
- 3 lbs of boneless chicken breast
- 4 T of butter, melted
- 1 large lemon, juiced (I just squeezed the lemon)
- 1/2 c of heavy cream
- 6 garlic cloves, minced
- A generous amount of mineral salt, black pepper, thyme, paprika, and dried parsley flakes to make seasoning
- 1/2 c of parmesan cheese, grated
- Preheat oven to 425°F.
- Spray glass baking dish with cooking spray.
- Place chicken breast in greased dish.
- Generously sprinkle with the seasoning.
- Whisk the melted butter, garlic, lemon juice, and heavy cream in a small bowl.
- Pour creamy mixture on top of chicken.
- Sprinkle chicken with parmesan cheese.
- Bake for 30 minutes.
This creamy lemon chicken is so simple, but tasty. It can be easily frozen, too. I was able to bring a half of a chicken breast to work for lunch the next Monday. I ate it cold in a salad. It was wonderful.

Easy Lemon Chicken Recipe
So creamy and full of flavor.
- 3 lbs chicken breast
- mineral salt, black pepper, dried parsley, thyme, and paprika
- 4 T butter (melted)
- 1 big juice of a lemon
- 1/2 c heavy cream
- 6 cloves garlic (minced)
- 1/2 c parmesan cheese
Preheat oven to 424 degrees.
Place chicken breast in a greased baking dish.
Sprinkle generously with seasonings.
Whisk the melted butter, lemon juice, garlic, heavy cream in a small bowl.
Pour creamy mixture over chicken.
Sprinkle chicken with parmesan cheese.
Bake for 30 minutes.
