If so, you will adore this easy Chunky Beef and Cauliflower Stew recipe that I made in my Power Cooker XL last weekend for my gang.
This beef stew recipe is so creamy and filling. I served it with a garden salad, and we were all satisfied.
I’ve been cooking THM style and was excited to share it with the group. I’ve been real pleased with the meat quality at our new Aldi’s and wanted to make something fantastic for my family with the beautiful looking stew meat that was on sale.

It only entails a few ingredients which makes it totally doable for this single busy mama.
How to Make the Pressure Cooker Cauliflower and Beef Stew Recipe
- 1 lb of beef stew meat
- 1 c of cauliflower, chopped
- 1 medium onion, diced
- 2 c of beef broth
- 2 c of heavy cream
- 2 t of Italian seasoning
- 1 T sea salt and pepper
- 1 t of chili powder (use more or less depending on your needs)
- Combine all ingredients in pressure cooker. Close the lid and steam release handle.
- Press Stew and cook for 15 minutes.
- When timer goes off, press cancel.
- Carefully use a quick release.
TIP: I doubled the recipe and I made a big huge mess. The creamy broth was seeping out the pressure release and I had the divine beef stew recipe all over my kitchen including the cabinets. So, lesson learned…don’t double anything unless you know your pressure cooker can contain it.
If you do not have a Pressure Cooker, you can throw all the ingredients in your slow cooker and cook on high for 4 hours or low for 6 hours.
I have always used my slow cooker regularly, but now I’m keen to my beloved Power Cooker XL.
