My son has been wanting to try chocolate bacon cupcakes, but I have to admit I was a bit leery.
I like bacon and chocolate, but the thought of them together did not excite me.
These chocolate bacon cupcakes certainly didn’t last long in our house. After all, they have bacon in them, so they are considered a breakfast food.
How to Make Chocolate Bacon Cupcakes
- 2 c of All- Purpose flour
- 3/4 c of cocoa, I like the dark
- 2 c of sugar
- 1 T baking powder
- 1 t baking soda
- 1 t salt
- 2 eggs, beaten
- 1 c of coffee
- 1 c of buttermilk
- 1/2 c of oil (I used coconut)
- 12-14 pieces if bacon, crispy and crumbled
In a large bowl, mix together cocoa, sugar, baking powder. baking soda and salt. Next mix in the remaining ingredients except bacon. Mix well until blended. Add bacon to the mix. Spoon batter into greased or paper-lined muffin cups, filling 2/3 full. Bake at 375 degrees for 25 minutes. Let muffins cool on wire rack. Frost cupcakes
How to Make Chocolate Frosting for Chocolate Bacon Cupcakes
- 1 c of butter, soften
- 1/2 c of cocoa powder
- 5 c of powder sugar
- 1 T of vanilla
- 4 t of milk
Mix all the ingredients together. Spread on cooled cupcakes.
