Hot Chocolate Family Night Idea

Hot Chocolate is always a treat at our house, but especially when we surprise our children with homemade hot cocoa and a road trip to view the magnificent Christmas lights.

This is one of our favorite Christmas traditions each year!

Already for bed in their warm pajamas, we mysteriously announce that we are going to take yummy hot chocolate in to go cups.  Bring a thermos for refills. And yes, hot chocolate works wonderful in sippy cups, too.

I always make sure I have a new Christmas cd in the cd player in the car. We usually purchase a new one each year. We have developed quite a collection.

One year I was feeling extra merry and brought Christmas cookies to eat while my little ones were enjoying the beautiful Christmas lights in the car.

Yes, it’s a bit messy, but it’s so fun and it only happens once a year!  So, don’t be a scrooge!

Easy Autumn Mix!

Easy autumn mix


Autumn Mix is the perfect snack for this time of year.  It’s super easy and looks so very festive!

I threw this together for our Ladies Retreat and it was a HUGE hit!  And the best part is you can throw and mix anything your little heart desires.

If for some odd reason you have left-overs, store in a tight zip lock bag.

Here’s what I put in my Autumn Mix.

  • bugles
  • chex cereal
  • m & m’s (they were out of the autumn colors)
  • Scooby graham snacks (wanted to put chocolate teddy grahams)
  • autumn mix brach’s candy
  • caramel popcorn

As you can see, you can be as creative as you want.  I think Reese’s pieces would look perfect in there, too!

How to Bake Pumpkin Seeds Recipes!

I remember roasting pumpkin seeds from our pumpkin as a child.  I have carried over the delicious and healthy tradition with my children.

We all look forward to these tasty snacks each year.

How to Bake Pumpkin Seeds

Roasted Pumpkin Seeds

Ingredients

  • 1 1/2 cups raw whole pumpkin seeds
  • 2 teaspoons butter, melted (I put in microwave)
  • 2-3 pinches of salt ( I use sea salt)

Directions

  1. Preheat oven to 300 degrees.
  2. Toss seeds in a bowl with the melted butter and salt. Spread the seeds in a single layer on a baking sheet and bake for about 40 – 45 minutes or until brown; stir occasionally.

Spiced Pumpkin Seeds 

Ingredients

  • 1 1/2 tablespoons margarine, melted
  • 1/2 teaspoon salt
  • 1/8 teaspoon garlic salt
  • 2 teaspoons Worcestershire sauce
  • 2 cups raw whole pumpkin seeds

Directions

  1. Preheat oven to 275 degrees F (135 degrees C).
  2. Combine the margarine, salt, garlic salt, Worcestershire sauce and pumpkin seeds. Mix thoroughly and place in shallow baking dish.
  3. Bake for 1 hour, stirring occasionally.

Sweet Pumpkin Seeds

Ingredients

  • 2 cups raw whole pumpkin seeds
  • 2 tablespoons butter, melted
  • 1/2 cup white sugar, divided
  • 1 tablespoon ground cinnamon, divided

Directions

  1. Remove all the pulp and strings from the pumpkin seeds, then wash and thoroughly dry the seeds.
  2. Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  3. Place the melted butter in a bowl, toss the seeds in the butter to coat, and pour them onto the prepared baking sheet. Sprinkle about 2 tablespoons of sugar and 1 teaspoon cinnamon over the seeds, stir the seeds around to mix the coating, and spread them into a single layer. Bake the seeds in the preheated oven for 5 minutes.
  4. Remove the seeds from the oven, and sprinkle them with another coating of 2 tablespoons sugar and 1 teaspoon cinnamon, mixing the seeds together and spreading them out as before. Bake 5 more minutes. Repeat the coating and baking step one more time, and bake the seeds for 5 more minutes.
  5. Sprinkle the seeds with the remaining 2 tablespoons of sugar, mix, and bake the sugar coating onto the seeds, about 10 more minutes. Let the seeds cool on the baking sheet before eating.
