My family adores this brown sugar muffins recipe. They make the perfect breakfast on Sunday mornings when we are all trying to get out the door for worship.
I am on a brown sugar kick since I discovered how to make own brown sugar. My addiction doesn’t help my new low sugar plan, but my family loves me for it.
The Best Brown Sugar Muffins Recipe
- 2 c of cooking oats
- 1 c of milk
- 1 1/2 c of brown sugar, packed
- 1/2 c of butter, melted
- 2 eggs, beaten
- 2 c of all-purpose flour
- 1/2 c of walnuts
- 4 t of baking powder
In a large mixing bowl, mix oats, milk, and brown sugar. Let it thicken for 5 minutes. Next, add eggs and butter and mix well. add the remaining ingredients and mix until moistened. Fill the greased muffin tin 3/4 full and bake at 400 degrees for 15-20 minutes. Let cool before serving.
Makes 2 dozen muffins.
