If you haven’t made beef Mexican lasagna yet, you’re in for a real treat!

It freezes well and it’s a tad different from traditional lasagna. So wash your hands and get your apron on.

How to Make Beef Mexican Lasagna

Ingredients

  • 12 Oven Ready Lasagna Noodles(do not boil)
  • 1 lb of ground beef
  • 1 pkg of taco seasoning
  • 20 oz of Pasta Sauce
  • 2 eggs
  • 10 oz of ricotta cheese
  • 4 cups of shredded Mexican-style cheese, divided

Directions

Cook ground beef and taco seasoning in large skillet. Be sure to follow the taco seasoning package directions. Remove from stove and add the pasta sauce. Beat eggs in bowl, stir in ricotta cheese and 2 cups of shredded Mexican cheese. Spray 13×9 baking pan with nonstick cooking spray. To assembly the beef Mexican lasagna, spread 1 cup of meat mixture in bottom of pan. Place 4 lasagna noodles over meat mixture. Top with half of ricotta mixture and 1 cup of meat. Repeat layers ending with meat. Add remaining 2 cups of cheese on top of lasagna. 

Cover with foil and bake for 45 minutes at 375 degrees.  Uncover and continue cooking until cheese in melted. Let stand 15-20 minutes before cutting.

Make 12 servings.

This is delicious with guacamole salad and tortilla chips.
